I actually check around and could not find a solid answer. There are only rumors, basically there are 2 that I found out. 1) The bite is to homage to the mathematician Alan Turing, who committed suicide by eating an apple he had laced with cyanide. source - http://en.wikipedia.org/wiki/Apple_logo#Logos. 2) The second one says that the bite is a bite of knowledge. It's related to bite of sin by Adam and Eve. The apple bring knowledge to the world.
